Ahhhh the perfect summer salad. Watermelon? yes!…………. Feta? yes!! ………………Orange juice? what?
My mom brought this delectable concoction to our family get-together on Father’s day at my aunt Susu’s house. I couldn’t get enough. The juicy cold watermelon paired with soft feta was oh-so-refreshing. It was the perfect side dish for a family pool day. I recreated it last week when David’s parents were in town and wanted to post it here so I would always have the recipe! Y’all know it’s one of my favorites since there’s no possi
Also, what did y’all think of the bachelor? I thought it was pretty predictable this year and hope they make it, but I’m really not that hopeful. (Sorry, Jojo!) Did y’all see that Ben and Lauren are going to have their own show!? Oh lawwww…….Two questions: Are all the other bachelor/bachelorette couples jealous and 2) what time and channel does it come on? haha Hope you are having a great week and thank you so much for reading!

For the vinaigrette:
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice (2 lemons)
- 1/4 cup minced shallots (1 large)
- 1 tablespoon honey
- 1/2 cup good olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
3 cups (4 ounces) baby arugula, washed and spun dry
1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
12 ounces good Feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned
Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.
