Breakfast is my favorite meal of the day. Eggs Benedict, omelets, or muffins… there is really no better way to start the day. But since I’m not really a morning person, breakfast usually consists of a breakfast bar on my way out the door or just cereal. However when there’s something pre-made that lasts for days, a gourmet breakfast becomes a possibility without having to sacrifice any time.
Any food that can be served as breakfast OR dessert is fine by me. This blueberry breakfast cake falls into that category. It’s so good in the morning with coffee, but could also be served after dinner with whipped cream and mixed berries on top. Using summer blueberries from the farmers market and this recipe, we have been enjoying this treat every morning.
