Breakfast is my favorite meal of the day because you can eat whatever you want and not feel bad – the options are limitless and I like about 95% of ALL those options. Muffins, fruit, doughnuts, pancakes, eggs, omelets, waffles, coffee, tea, french toast… it just goes on and on. A breakfast bar on my way out the door in the morning isn’t ideal, but anyone who knows me knows the mornings aren’t where I shine, and I need every spare second I can get. So when I stubbled upon these mini-frittatas, I made them and have enjoyed my own version of the princess feast every day this week. I keep them frozen, then toast an english muffin and heat the frittata up for 40 seconds – breakfast is served (and I can still have time to hit snooze once. . . or twice).
