Confetti is one of my very favorite things. So naturally, funfetti cupcakes are high on my list as well. And since I am constantly looking for any excuse to finish off the bowl of cake batter or eat a bite of cookie dough instead of a cookie, when someone did something nice for me this past weekend, I knew I had to jump at the opportunity to make and give them cupcakes. This was my first time to make icing by pouring cream into a bowl and whipping it with a hand mixer. The result was light and fluffy funfetti cupcakes.
This past weekend I ran in a race in Greenwood, MS. We enjoyed a pre-race meal at Giardina’s – I simply adore their private booths with a curtain. The 65 degree weather was great for the run and the tall trees creating a shade umbrella over the roads made me feel like I was running on the set of Father of the Bride. The berry and grape powerade that middle school cheerleaders passed out tasted great, but my favorite refreshment was the freshly cut orange slices a woman was offering towards the end of the run, when I needed it most.
