I’ve been seeing these cookies a lot lately, and since I’ve never had one, I decided to make them. In retrospect, I’m not sure it was such a good idea. They are pretty challenging to make, especially for a beginner, but I felt great about the ones that turned out perfectly with the little “foot” like so. I love all the different colors and endless possibilities of flavors and fillings. I used this recipe with a white chocolate filling.
This summer, as far as cooking goes, I have learned that Mint is uh-Mazing. I love the smell and the taste. It instantly makes any dish or drink smell delightful and fresh. This Farro salad was packed full of fresh herbs, including mint and was a good base for the salmon.
